Description du producteur Champagne Dom Pérignon: Exceptional Champagnes… a unique moment of fullness. This prestigious brand of Champagne is the brand of the spiritual father of all champagnes. Named for the famous monk, Pierre Perignon, prosecutor of the Abbey of Hautvillers in 1668, the house Dom Perignon is inspired by the Benedictine’s spirit and philosophy. This led this champagne to the perfection: rigor and intuition, observation and understanding, knowledge and respect. Its goal was to design the "best wine in the world." The House Dom Pérignon continues to perpetuate this visionary approach, leading to the real luxury: Rethink constantly the exceptional. "Dom Perignon vintages" are developed only when the grapes are reaching the highest quality. The qualities of a single vintage and the Dom Perignon’s spirit make the personality of the Dom Perignon’s champagnes: a combination of lightness, air richness and flexibility, from the first impression until the last flavor in mouth. There are several steps in the evolution of the Dom Perignon’s champagne. If each vintage has its own curve of evolution, we can distinguish three stages of ageing while vintages express the best of themselves. These three moments of excellence express the complexity and diversity of the wine. With ages, the style is confirmed and reveals all its intensity. Meanwhile, the specificity of each vintage is widening. There are three basic levels: -- The first is the initial marketing (bottles are aged during seven years in cellars): vintages present rather aromas of: fresh brioche, citrus, honey and sometimes sweet spices. -- The second level, aged around twelve to fifteen years, always under the same conditions, extends the aromatic characteristics: toasted aromas, nutty, biscuit, malt, chocolate and spices. -- Beyond twenty years, the aromatic palette changes of dimension and takes us somewhere else. The rich aroma is intriguing. We are moving away from classical register to discover new sensations, almost near from perfumes: sandalwood, musk, new leather, blend of oriental spices, blond tobacco, and white truffle. The champagnes Dom Perignon almost lead to the eternity…
